Easy 1-bowl snack cookies made simple with muesli, almond butter and dark chocolate chunks. Oil free, gluten free, lightly sweetened, and packed with protein and fiber. Perfect for a healthy breakfast, snack, or dessert.

INGREDIENTS

  • 1 flax egg (1 TBS flaxseed + 3 TBS filtered water)

  • ¼ cup maple syrup

  • ½ cup nut or seed butter

  • 1¾ cup GF museli

  • ½ cup almond meal

  • ¼ tsp cinnamon

  • ¼ cup dried cherries or dried fruit (optional)

  • 1 bar Hu Kitchen Simple Dark Chocolate, roughly chopped (~1/3 cup chopped, plus more for topping)

INSTRUCTIONS

  1. Preheat oven to 350 and large a large baking sheet with parchment paper.

  2. In a large bowl, mix together flax egg, maple syrup, and nut butter until smooth.

  3. Mix in the muesli, almond meal, and cinnamon and stir to combine.

  4. Fold in optional dried cherries and chocolate bar chunks.

  5. Roll dough in ~2 TBS balls, then flatten with your hands into 16 cookie discs.

  6. Add additional chocolate chunks on top, if desired.

  7. Bake for 12-15 minutes until lightly browned underneath.

  8. Cool before eating (they firm up a lot!) and store in an air tight container in the refrigerator for 3-5 days. Freeze for longterm storage.
